Puff Pastry - Step by Step with photographs


Puff pastry is a pastry that has a dough without yeast.
Puff pastry is also known as the queen of all pastry,
because the manufacture is not easy and requires 
skill and patience. 
However, the results justify the effort. 
From one basic dough can be created dozens of 
variations Puff pastry both sweet and savory. 
Puff pastry dough distinctive feature is the 
inclusion of fat in the dough bases via folding process. 
Or Puff pastry can also be said pastry with 
layers of fat in between the layers of dough 
that is formed during combustion of an open network, 
multi-layered brittle.


Ingredients

500 g cake flour
15 grams sugar
7.5 grams of salt
50 gr egg
250 cc of water ice
50 g margarine
250 grams of fat coating (roll-in fat)


How to make


1.    Mix flour, sugar, and salt, put the eggs. Enter mostly water then knead.

Resep Puff Pastry

Namun, hasilnya sesuai dengan jerih payah. Dari satu adonan dasar dapat diciptakan lusinan variasi Puff pastry baik manis maupun gurih. Ciri khas adonan Puff pastry adalah memasukkan lemak pada adonan dasar melalui proses pelipatan. Atau Puff pastry dapat juga dikatakan pastry dengan lapisan-lapisan lemak yang berada di antara lapisan-lapisan adonan sehingga pada waktu pembakaran terbentuk suatu jaringan terbuka yang getas dan 
berlapis-lapis.


Bahan-bahan puff pastry

  • Tepung terigu
Gunakan tepung terigu protein sedang yang akan memberi struktur gluten yang cukup lunak. Tepung terigu dengan kadar protein tinggi akan menghasilkan adonan keras, yang mudah memecahkan lapisan selama penggilasan dan pelipatan. Tepung terigu dengan kadar protein rendah tidak akan menghasilkan lapisan-lapisan yang cukup kuat untuk menahan penggilasan dan pelipatan yang berulang-ulang.
  • Lemak pelapis (roll-in fat)
Industri lemak telah mengembangkan lemak pelapis (roll-in fat) khusus dari lemak hewan/tumbuhan yang dikeraskan atau campuran keduanya
  • Garam
Sejumlah kecil garam ditambahkan untuk menstabilkan gluten dan membulatkan adonan.
  • Kuning telur, gula, dan susu bubuk
Bahan-bahan ini ditambahkan agar warna dan penampilan pastry menarik, selain itu cita rasanya pun bertambah lezat.
  • Cuka atau alkohol
Cuka atau alkohol dapat ditambahkan jika tepung terigu mengandung gluten terlalu kuat untuk mencegah penyusutan pastry ketika dipanggang.



Pembuatan Adonan Dasar Puff Pastry

Bahan :
500 gr tepung terigu protein sedang
15 gr gula pasir
7,5 gr garam
50 gr telur
250 cc air es
50 gr margarin
250 gr lemak pelapis (roll-in fat)

Cara membuat adonan:

1.    Campur tepung terigu, gula pasir, dan garam, masukkan telur. Masukkan sebagian besar air kemudian diuleni.



2.    Masukkan margarine, uleni Masukkan margarin, uleni adonan tapi tidak sampai kalis, diamkan dalam lemari es selama 15 menit.
  

3.    Giling adonan, taruh lemak pelapis (roll-in fat) di bagian tengah, bungkus seperti amplop, giling setebal 1/2 cm.

4.      Lipat adonan dari satu sisi menutupi 2/3 lembaran, lipat 1/3 bagian sisa menutup sisi sebelahnya. Giling lagi setebal 1/2 cm, simpan dalam lemari es selama 10 menit.

5.      Lakukan proses langkah no. 4 sampai 3 kali. Simpan dalam lemari es 15 menit. Kemudian keluarkan dari lemari es, giling setebal ½ cm, adonan siap dibentuk


Tempatkan adonan dalam loyang yang dilapisi air untuk mendapatkan adonan Puff dengan pengembangan yang tinggi. Untuk pastry yang menggunakan adonan Puff, beberapa jenis isi
manis seperti pasta, krim, buah-buahan dapat digunakan. Puff pastry lain adalah jenis yang tidak manis, seperti sausage rolls, shells dan cheese pretzel. Produk-produk yang setengah jadi termasuk patty shells, cream horns, dan lain-lain.
